Sweet Potato Protein Pancakes


Ingredients:
  • 1/2 cup cooked sweet potatoes
  • 1 cup rolled oats
  • 1 scoop of whey protein powder (& I used Vanilla Shakeology)
  • 1 tbsp greek yogurt
  • 2 eggs
  • 1 tbsp honey
  • 1/2 tsp xanthum gum
  • a (heaping) dash of cinnamon
  • a pinch of salt

Directions
  1. Blend all of the ingredients in a blender until smooth
  2. Pour batter onto heated pan
  3. Cook pancakes on medium heat
These pancakes were sooooo yummy!! The sweetness of the sweet potato totally takes over!! After making all of the pancakes, I topped mine with greek yogurt. Why use syrup when greek yogurt tastes amazing and is actually nutritious? Also, these pancakes come out rather thick/dense. For a lighter pancake, just add a bit of almond milk  :)
