- 1/2 cup cooked sweet potatoes
- 1 cup rolled oats
- 1 scoop of whey protein powder (& I used Vanilla Shakeology)
- 1 tbsp greek yogurt
- 2 eggs
- 1 tbsp honey
- 1/2 tsp xanthum gum
- a (heaping) dash of cinnamon
- a pinch of salt
- Blend all of the ingredients in a blender until smooth
- Pour batter onto heated pan
- Cook pancakes on medium heat
These pancakes were sooooo yummy!! The sweetness of the sweet potato totally takes over!! After making all of the pancakes, I topped mine with greek yogurt. Why use syrup when greek yogurt tastes amazing and is actually nutritious? Also, these pancakes come out rather thick/dense. For a lighter pancake, just add a bit of almond milk
